- Se corta la carne en tiras o cubos, se acitróna en aceite bien caliente o sella con ajo y cebolla, en una cazuela de barro con tapa, cuando este doradita la carne se baja la flama.
- Se agrega el pulque, en el primer hervor se le da un toque de sal y coloca o pone el chile picadito.
- Dejamos hervir a fuego manso hasta que se reduzca, luego agregamos las hojas de quelite, hierba santa y epazote picado. Cocinamos otros 20 minutos con la cazuela tapada.
- Al estar blandas las hojas agregamos los nopalitos cocidos, rectificamos el sazón y ponemos el coco.
- Dejamos otros cinco minutos al fuego para que todo este caliente y servimos, en casa este guiso también se usaba de relleno para sopes, pambazos, quesadillas, taquitos en hojados, etc.
- Se acompaña de ensalada o una sopa de arroz con rajas y tortillitas recién hechas y una buena agua fresca.
