  1. Pon a cocer la carne en 2 litros de agua, con las hojas de laurel, media cebolla y sal. (Puedes agregar un poco de consomé) debes sazonar muy bien el caldo porque lo usarás para batir la harina. Cuando la carne esté suave, sácala, deja enfriar y desmenuza. Y cuela el caldo y reserva.
  2. Bate la manteca junto con el polvo para hornear hasta que "blanquee" agrega la harina, una cucharadita de sal y caldo el necesario (1 - 2 tazas) y sigue batiendo hasta formar una masa uniforme y sin grumos
  3. Cuece los tomatillos junto con los chiles, la mitad de la cebolla y 1 diente de ajo, cuando estén listos escurre y licúa con una cucharadita de sal y un poco de cilantro, en una olla pon un chorrito de aceite y fríe la salsa, agrega la carne desmenuzada y cocina por 5 minutos. ((Si no consigues los tomatillos frescos, puedes usar de lata, los drenas y licúas con los mismos ingredientes ☝️☝️))
  4. Engrasa el molde y con tus manos esparce la masa cubriendo todo (incluso el centro) rellénalo con el guiso y cubre la parte de arriba con el resto de la masa, sellalo con papel aluminio y cocina a baño María por 1 hora. (Puedes hacerlo en una olla tipo vaporera o en el horno).
  5. Decora con crema fraiche (o crema ácida) y disfruta de un buen trozo de tamal 😋
