- Preparación del maíz
- Ponemos Hervir agua en una Olla grande
- Agregamos el Maíz hasta que reviente (1.5 hrs aprox)
- Una vez que haya reventado el maíz, retiramos la cebolla y los ajos (si deseamos podemos licuarlos con los chiles en la sección de la salsa)
- Preparación de la salsa roja
- En una olla con agua hirviendo colocamos los chiles desvenados y sin semilla, hidratarse por aprox 30 min
- Licuamos los Chiles, los 6 Chiles anchos y 6 guajillos, la cebolla troceada, el ajo, La Sal, pimienta, orégano y consomé de pollo
- Agregamos los chiles a la licuadora, mezclamos con la Cebolla en trozos, el Diente de Ajo, consomé de pollo, las Cucharaditas de Orégano y Sal, agregamos una taza aprox del caldo donde hidratamos los chiles
- Agregamos al licuado el manojo de Ajo partido por mitad
- Colamos la salsa licuada en una cacerola y dejamos integrarse por 30 min aprox
- Cocimiento de la carne:
- En una olla grande en agua hirviendo agregamos toda la carne y dejamos cocer a fuego medio alto por 2-2:30 hrs con una cebolla con corte en cruz en un extremo, mazo de ajo
- En la olla grande en donde cocimos el maíz agregamos la carne y la salsa previamente elaborada y dejamos cocinar por 20 minutos más a fuego medio -alto
- Un vez que la carne esté blandita se retira de la olla de cocimiento, se deshebra. Se reserva Y se agrega en el momento de servirlo, buen provecho y que lo Disfruten.
- Armado de plato agrega cebolla, cilantro picado desinfectado, Lechuga y rábanos
